Mediterranean Pasta Salad

Ingredients (Makes 2 serve)
- 1 cup cooked pasta
- ½ lebanese cucumber
- ½ sweet potato, roasted
- ½ tbsp olive oil
- ½ cup cherry tomatoes
- ¼ cup kalamata olives
- 2 spring onions
- 100g halloumi cheese
- 2 tbsp pine nuts
- ½ lemon juice
- 1 tbsp maple syrup sugar free
Dressing:
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp maple syrup
- ½ lemon juice
- ¼ cup fresh basil
- 2 tbsp fresh dill

Prep your ingredients: Roast the sweet potato with a drizzle of olive oil in a preheated oven at 200°C for 20–25 minutes or until golden and tender. Toast the pine nuts in a dry pan over medium heat for 2–3 minutes until lightly golden.

Cook the halloumi: Slice the halloumi and pan-fry in a non-stick pan over medium heat for 2–3 minutes on each side, until golden and crisp.

Make the dressing: In a small bowl or jar, whisk together olive oil, apple cider vinegar, lemon juice, maple syrup, basil, and dill. Set aside.

Assemble the salad: In a large mixing bowl, combine the cooked pasta, cucumber, cherry tomatoes, olives, roasted sweet potato, spring onions, and grilled halloumi. Pour the dressing over the salad and toss gently to combine.

Finish and serve: Drizzle with lemon juice and sprinkle the toasted pine nuts on top just before serving. Optional: Mix in 1 scoop of your Super Beauty Greens for an extra nutrient boost!
