Healthy Chicken Ramen

This Healthy Chicken Ramen is a warm, nourishing twist on classic comfort food. Made with real ramen or egg noodles instead of instant packets, it features tender chicken, a rich spicy broth, and plenty of fresh greens. At around 500 calories per serve, it delivers the perfect balance of flavour, protein, and satisfaction for an easy, wholesome meal.

Ingredients (2 serves)

Ingredients

  • 200g chicken breast, thinly sliced
  • 113g egg noodles (thick)
  • 500ml chicken stock
  • 1.5 tbsp gochujang paste (adjust to taste)
  • 2 tbsp tamari 
  • Juice of 1 lime
  • 2 tsp ginger & garlic paste (or pre-minced ginger & garlic)
  • 1.5 tbsp peanut butter
  • 100g bean sprouts
  • 200g pak choi, roughly chopped
  • 1 tbsp Spring onion
  • 1.5 tsp Chilli oil
  • 1 tsp sesame seeds

Method

  1. Cook the chicken: Season chicken breast with your favourite seasoning mix (I used BBQ flavouring). Heat a small splash of oil in a pan. Add chicken and cook until golden and cooked through (~7-9 mins). Remove and let rest.

  2. Make the broth: In a medium pot, combine chicken stock, gochujang, soy sauce, lime juice, ginger & garlic, and peanut butter. Bring to a gentle simmer.

  3. Cook the noodles: Add ramen noodles to the broth and cook according to packet instructions (~3–4 mins).

  4. Add greens: Toss in pak choi and beansprouts for the last 2 minutes of cooking.

  5. Serve: Divide noodles, chicken, and veggies between bowls. Pour over the flavorful broth. Optional: top with extra lime, sesame seeds, or spring onions.
