Lime Coconut Chicken

The combination of tangy lime, creamy coconut, and savoury chicken creates a delightful fusion of flavours, while the addition of aromatic spices like garlic and ginger adds depth to the dish. This recipe provides a balance of protein from the chicken, healthy fats from the coconut milk, and vitamins and minerals from the fresh ingredients, offering a satisfying and nourishing meal. Ingredients (4 serve):
3 chicken breasts, pounded flat
1 tsp paprika
Salt + pepper to taste
Coconut oil, to cook
1 brown onion, diced
2 garlic cloves, grated
2 tsp of grated ginger
1/2 red chili, deseeded + diced
Zest + juice from 2 limes
1/2 cup of chicken stock
1 x 270ml can light coconut milk
1 tbsp fish sauce
To serve: rice, chopped coriander, red chilli, lime slices
Per serving: 2 scoops Grape Collagen + water
Method:
- Rub both sides of your chicken with the paprika, salt, and pepper.
- Heat 2 tsp oil in a large pan and cook each side of your chicken until golden. Remove from the pan.
- Add 2 tsp oil, add onion and cook until it softens.
- Add garlic, ginger, chilli, and lime zest. Cook for about 1 min or until it becomes fragrant.
- Pour in the chicken stock, coconut milk, fish sauce, and lime juice, and mix well.
- Return the chicken to the pan and cook each side for 5-8 min.
- Meanwhile, dissolve 1 scoop of grape collagen in a large glass of water and stir.
- Slice the chicken, serve on top of rice, garnish with coriander, red chili, and a slice of lime.
