Healthy Chicken Parmigiana

This lightened-up Chicken Parma has all the flavour of your pub favourite — golden crumbed chicken, rich tomato sauce, and gooey melted cheese — but made easy in the air fryer! Served with roasted cherry tomatoes, fresh greens, and a refreshing glass of Raspberry Crush Beautiful Energy, it’s the ultimate comfort meal with a healthy twist.

Ingredients
- Chicken:
- 350g chicken breast
- 1 egg
- ½ cup panko breadcrumbs
- 1 tsp garlic salt
- 1 tsp onion powder
- 1 tsp dried mixed herbs
- A few grinds of black pepper
- ⅓ cup canned crushed tomatoes
- 50g fresh mozzarella, sliced
- 2 tbsp parmesan cheese, grated
- Rocket and spinach, to serve
- 2 serves raspberry crush beautiful energy + water, to serve
Tomatoes:
- 250g cherry tomatoes
- ½ tsp garlic salt
- Olive oil spray
Method

Slice the chicken breast in half horizontally to create two thin fillets. Gently pound to even thickness.

In one bowl, whisk the egg. In another, combine the breadcrumbs, garlic salt, onion powder, mixed herbs, and black pepper.

Dip each chicken fillet into the egg wash, then coat generously in the breadcrumb mixture.

Place the coated chicken in the air fryer basket, spray lightly with olive oil, and air fry at 200°C (390°F) for 10 minutes.

Meanwhile, heat a small pan over medium heat. Add cherry tomatoes, garlic salt, and a light spray of olive oil. Cook for 5 minutes, or until the tomatoes are soft and just starting to burst.

After 10 minutes, remove the chicken and top with crushed tomatoes, mozzarella slices, and parmesan. Return to the air fryer for 5 more minutes, or until the cheese is melted and golden.

Stir the BE powder into two glasses of water. Divide the rocket and spinach between two plates, spoon over the roasted tomatoes, and top with the chicken. Serve alongside the drink and enjoy!
