Sesame Soy Chicken

Crispy, saucy, and bursting with flavour, this Sesame Soy Chicken is a weeknight winner. Tender air-fried chicken is coated in a glossy, savoury-sweet sauce and served over hearty brown rice with cool, crunchy cucumbers. Paired with a refreshing glass of Beauty Greens, it’s a balanced, delicious meal that comes together with ease—perfect for busy days or satisfying cravings.

Ingredients
- 1 egg, whisked
- 500g chicken breast, cubed
- 1/3 cup cornflour
- 1 tsp salt
- 1 tsp garlic powder
- 2.5 cups cooked brown rice, to serve
- 3 Lebanese cucumbers, sliced
- 3 serves beauty greens powder
- Sauce
- 1/4 cup soy sauce
- 1 tbsp honey
- 3 tbsp tomato paste
- 3 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 tsp garlic paste
- 1 tsp ginger paste
- 2 tbsp cornflour
- 1/4 cup water
- 1 tbsp toasted sesame seeds
Method

Whisk the egg in a medium bowl, add the chicken, and mix to coat.

In a separate bowl, combine the cornflour, salt, and garlic powder. Add the chicken and toss to coat evenly. Shake off any excess flour.

Place the chicken in the air fryer basket, spray with oil, and air fry at 180°C for 12 minutes, or until golden and cooked through.

Meanwhile, whisk together all sauce ingredients (except sesame seeds) in a small pot. Cook over medium heat for 3–5 minutes, until thickened, then remove from heat.

Add the crispy chicken to a large bowl, pour over the sauce, and toss to coat.

Divide the rice between bowls, top with cucumber and chicken, and sprinkle with sesame seeds.

Add a serve of Beauty Greens to each glass of water, stir to dissolve, and enjoy!
