Broccoli and Beef

Serves 2
- 300 g beef (flank, rump)
- 1 tsp baking soda
- 1 tbsp rice vinegar
- 3 cups blanched broccoli
- 1½ cups cooked white rice
- Sesame seeds, to garnish
- 2 scoops Super Beauty Greens
Sauce:
- ¼ cup soy sauce
- 1 cup beef or vegetable broth
- 1 tbsp toasted sesame oil
- 2 tsp honey
- 1 tsp minced garlic
- 2 tsp minced ginger
- 1 tbsp rice vinegar
- 1 tbsp cornflour
Method

Slice the beef into 0.5 cm–thick slices. Place in a bowl with the baking soda and rice vinegar, toss to coat, and set aside.

In a separate bowl, add all the sauce ingredients and whisk until well combined.

Heat a large skillet over high heat and lightly spray with oil. Add the beef in a single layer and cook undisturbed for 1 minute, until browned. Stir and cook for a further 30 seconds, or until just cooked through.

Add the blanched broccoli to the pan, then pour over the sauce and quickly toss to combine.

Once the sauce starts bubbling, stir to coat everything evenly. Let it simmer for about 1 minute, or until the sauce thickens.

Remove from the heat immediately. Serve over two bowls of rice and sprinkle with sesame seeds, if desired.

Add one scoop of Super Beauty Greens to each glass of water, stir to dissolve, and enjoy alongside the meal.
