Healthy Chicken Burgers

A healthier take on a classic favourite - these chicken burgers balance flavour and nutrition. Tender seasoned chicken, crisp bacon, fresh salad and a creamy pepper mayo comes together between soft high-fibre rolls - paired with golden air fried chips for the perfect ‘better for you’ meal.

Ingredients
Burgers
- 2 high-fibre, low-GI white rolls, or multigrain rolls
- 1 medium chicken breast (halved horizontally to create 2 even fillets)
- 2 lean slices rindless bacon
- ½ cup baby spinach leaves
- ½ ripe tomato (~4 slices), sliced
- ½ small Lebanese cucumber, thinly sliced
- 1 tbsp of home-made pepper mayo [see recipe below]
Seasoning Mix (½ for chicken and ½ potatoes)
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp mixed Italian herbs
- Pinch of sea salt and cracked pepper
Healthy Pepper Mayo
- 2 tbsp Greek yoghurt
- 1 tbsp reduced-fat mayonnaise
- ½–1 tsp cracked black pepper
- ¼ tsp garlic powder
- ½–1 tsp Dijon mustard

Squeeze of lemon juice (optional)
Chips
- 2 large (~150g) white potatoes, washed and dried
- Light olive oil spray
Method
1. Prepare the Components
- Make the seasoning mix: Combine paprika, garlic powder, onion powder and Italian herbs in a small bowl. Set aside.
- Prepare the pepper mayo: In a separate bowl, whisk together Greek yoghurt, reduced-fat mayonnaise, cracked pepper, garlic powder, Dijon mustard and lemon juice until smooth. Refrigerate until needed.

Prep the chicken: Slice the chicken breast into two even fillets. Place into a medium bowl, sprinkle with half of the seasoning mix and toss to coat thoroughly. Cover and refrigerate while you prepare the chips.
2. Cook the Chips
- Slice the potatoes into even chips.

Transfer to an airfryer basket, spray lightly with olive oil and season with the remaining seasoning mix. Toss to coat.
Airfry at 200°C for 22 minutes, shaking the basket halfway through, until crisp and golden.
3. Prepare the Salad
While the chips cook, wash the baby spinach and slice the tomato and cucumber. Set aside on a platter for assembling.
4. Cook the Chicken and Bacon
- Heat 1 teaspoon extra virgin olive oil in a medium non-stick pan over medium heat.
- Add the seasoned chicken fillets and cook for approximately 5 minutes per side or until golden and cooked through. Transfer to a plate to rest.
- Add the bacon to the same pan and cook until crisp.
5. Toast the Rolls
Once the chips are nearly ready, slice the rolls in half and place them cut-side-up in the airfryer for 2 minutes until lightly toasted.
6. Assemble the Burgers
Layer the toasted rolls with spinach, tomato, cucumber, the warm chicken fillet, crispy bacon and a generous spoonful of pepper mayo.
Serve immediately with the hot, seasoned chips.
