Mexican Beef & Sweet Potato Bake

This hearty one-dish wonder is your go-to for a protein-packed meal with bold flavour and minimal fuss. Juicy lean beef, black beans, and tender sweet potato are simmered in a spiced tomato base, then topped with melted Mexican cheese for the ultimate comfort factor. Finished with light sour cream and fresh coriander, it’s a deliciously satisfying way to nourish and refuel—perfect for busy weeknights or meal prep.

Ingredients (Makes 1 Serve)

  • 1 tbsp olive oil
  • ½ onion (diced)
  • 1 clove garlic (minced)
  • 1 tbsp taco seasoning
  • 150g lean beef mince
  • ½ cup crushed tomatoes
  • 150g diced sweet potato
  • ½ cup black beans (rinsed and drained)
  • ½ cup Mexican cheese (shredded)
  • 2 tbsp light sour cream
  • 1 tbsp fresh coriander (chopped for garnish)

Method:

  1. Heat olive oil in a pan over medium heat. Add diced onion, garlic, and beef mince, cooking until the beef is browned and the onion is softened.
  2. Stir in taco seasoning and cook for another 1-2 minutes until fragrant.
  3. Add crushed tomatoes and bring to a simmer. Let it cook for 5-7 minutes to combine the flavors.
  4. Stir in the diced sweet potato and cook for an additional 5 minutes until slightly softened.
  5. Stir in the black beans, then transfer the mixture to an oven-safe dish.
  6. Top with shredded Mexican cheese and bake in the oven at 180°C (350°F) for about 10-12 minutes, until the cheese is melted and bubbly.
  7. Remove from the oven and top with light sour cream and fresh coriander. Serve hot.
