    Mexican Beef & Sweet Potato Bake
This hearty one-dish wonder is your go-to for a protein-packed meal with bold flavour and minimal fuss. Juicy lean beef, black beans, and tender sweet potato are simmered in a spiced tomato base, then topped with melted Mexican cheese for the ultimate comfort factor. Finished with light sour cream and fresh coriander, it’s a deliciously satisfying way to nourish and refuel—perfect for busy weeknights or meal prep.
Ingredients (Makes 1 Serve)
- 1 tbsp olive oil
 - ½ onion (diced)
 - 1 clove garlic (minced)
 - 1 tbsp taco seasoning
 - 150g lean beef mince
 - ½ cup crushed tomatoes
 - 150g diced sweet potato
 - ½ cup black beans (rinsed and drained)
 - ½ cup Mexican cheese (shredded)
 - 2 tbsp light sour cream
 - 1 tbsp fresh coriander (chopped for garnish)
 
- Heat olive oil in a pan over medium heat. Add diced onion, garlic, and beef mince, cooking until the beef is browned and the onion is softened.
 - Stir in taco seasoning and cook for another 1-2 minutes until fragrant.
 - Add crushed tomatoes and bring to a simmer. Let it cook for 5-7 minutes to combine the flavors.
 - Stir in the diced sweet potato and cook for an additional 5 minutes until slightly softened.
 - Stir in the black beans, then transfer the mixture to an oven-safe dish.
 - Top with shredded Mexican cheese and bake in the oven at 180°C (350°F) for about 10-12 minutes, until the cheese is melted and bubbly.
 - Remove from the oven and top with light sour cream and fresh coriander. Serve hot.
